Chickweed (stellaria media) is a valuable herb for any natural medicine cabinet. It has traditionally been used to treat everything from coughs to eczema. It is astringent, carminative, demulcent, diuretic, expectorant, laxative, refrigerant and vulnerary.
Chickweed is harvested and eaten fresh in the Spring for its high nutritional content. It contains ascorbic-acid, beta-carotene, calcium, coumarins, genistein, gamma-linolenic-acid, flavonoids, hentriacontanol, magnesium, niacin, oleic-acid, potassium, riboflavin, rutin, selenium, triterpenoid saponins, thiamin, and zinc.
This chickweed grows wild on our farm in the Missouri Ozarks. We never use chemicals or fertilizers. We harvest at the peak moment, then carefully dry it under strict, controlled conditions to retain as many of the valuable constituents of the plant as possible.
